I eat this stuff at least 3 times a week, and will probably eat it more and more as the pregnancy progresses. I call it Killer Guacamole because it is simply A-m-a-z-i-n-g. I used to just throw some avocado into a bowl along with some salt, pepper, and lemon juice and just be done with it. It wasn't too bad. But then I went to a friend's house for a barbecue a few weeks ago and OO-MMYY-...found my new crack. I can't get enough of it and neither can my husband (who usually doesn't like guacamole)! For all you women out there that craze avocados, this recipe is for YOU!
For a single serving:
-1 diced avocado
-1 tbsp small diced red onion
-1 tbsp diced tomato
-pinch of cilantro, sliced small
-1/4 tsp thinly diced garlic
-1 tsp lemon juice
-squirt of lime juice
-salt and pepper to taste
-And the secret ingredient... McCormick's Guacamole seasoning packet (This will make all the difference and it's just $1 at WinCo!)
Mix in a bowl, but be very careful to not squish the avocado. You want it to stay chunky, not smooth. Eat with chips and welcome to Heaven.
